Many of the tea cultivars discovered and perfected in Taiwan have numbers for nicknames: JinXuan is called #12, Jade cultivar is known as #13. Ruby #18 is one of these; a cross between a wild Formosan tea plant and Assam, developed specifically to make phenomenal black tea.
Grown at an elevation of 600-800 meters near the famous Sun-Moon Lake in Nantou, Taiwan, Ruby #18 is one of the most popular black teas in Taiwan and the rest of East Asia. With the fertile soil, prefect temperature and humidity, the black tea here has the similar flavor to Sri Lanka black tea. Fermented at high temperature and humidity, exquisite quality with hand-picked, present natural sweet and charming taste. Our Ruby tea is somehow in limited quantities, following our philosophy of only using the finest leaf, picked by hand and planted without natural planted. Noted for the top quality black tea in Taiwan, sweet and inviting scent of fruits and spices permeate the aroma. The liquid is delicate with notes of mint, baking spices, and licorice complimenting a softer, fruity sweetness without astringent.
Story of the black tea in Sun Moon Lake
The tea was first planted by Japanese colonists in 1925. They introduced large leaf variety Assam to Puli, Shueili and Yuchi. With moderate temperature and rainfall here, the environment is quite suitable for tea. Consequently, the quality of tea turned out pretty good, and the tea industry of Sun Moon Lake region was then unveiled. It's worth mentioning that the tea is so good that used to served Japanese emperor.
The tea industry here reached a peak in 1940, exported over 7,000 tons every year. Unfortunately, due to some culture and policy changed after 50 years, the tea cultivation declined. Well, however, the still high desired of this tea makes it even more valuable now.
Small teapot of 200 ml
(1) 5 grams of tea leaf into teapot with 150 ml of 90°C water;
(2) First brew for 90 secs. Second brew for 60 to 90 secs; extend 10 to 20 sec after each brew. (Can be re-brewed for 6 to 8 times)
(1) 5 grams of tea leaf into teapot with 350ml to 500ml of boiling water.
(2) First brew for 3 minutes. Extend 1 to 2 minutes after each brew. (Can be re-brewed 3-4 times)
(1) 5 grams of tea leaf into teapot with 350 to 500 ml of cold water.
(2) Storage into refrigerator for 4 to 6 hours or until the liquid becomes golden yellow.
