 Characteristics  It is a cysteine protease enzyme present in Carica papaya and mountain papaya. Its utility is in breaking down tough meat fibers to save cooking time approximately 30%. To marinade 600g thick steak, it is only use up 5g (1tsps) papain with other seasonings for 30-50 minutes.
