In a natural farming garden, when the leafhopper insect nibbles on the buds, the tender leaves are exposed to air and begin to oxidize while still growing on the plant. The virgin aroma of tea comes out in order to repel the leafhopper. We then carefully handpick each bitten bud and leaf at the right moment, which forms the base for our Honey Black Tea.
After plugged by hand, the tea is fermented completely. When brewing, you can see the bright reddish liquid, with a medium-heavy body, rip fruity and honey sweet. Honeyed notes are the characteristic flavor of bitten tea. This carefully crafted tea presents a mellow, rich aftertaste with no astringent, and a high level of throat rhyme.

Aroma of the steeped tea is floral and sumptuous. The initial seconds of the first sip are sharp and perfume-like, which quickly melts into an elegant sweetness. Subsequent steeps mellow out the intensity, while drawing out new flavors. Syrup-like sweetness reminiscent of the finest black tea—cinnamon, caramel—and the notes of ripe, fresh cut and juicy fruit begin to add contrast against the pit honey flavor.
Unique and irreplaceable taste of tea from Taiwan Alishan "阿里山"
Alishan is one of the most famous tea region in Taiwan. Honey black tea garden is located on an elevation of over 1,300 meters in Chiayi Lijia (嘉義里佳). The mountains are steep and have short hours of sunshine, long hours covered with mist, those conditions make this place prefect for planting tea.
As the geology belonged to sandstone formation with block sandstone and shale, makes the area a perfect place for quality tea plant, which also gives the leaf a unique earthy taste. In this unpolluted mountains, teas are well-known for the “rhyme” that after tea absorb soil and water there(this is so called mountain-recognized rhyme, 山頭氣).
Small teapot of 200 ml
(1) 5 grams of tea leaf into teapot with 150ml of boiling water;
(2) First brew for 90 secs. Second brew for 60 to 90 secs; extend 10 to 20 sec after each brew. (Can be re-brewed for 6 to 8 times)
(1) 5 grams of tea leaf into teapot with 350ml to 500ml of boiling water.
(2) First brew for 3 minutes. Extend 1 to 2 minutes after each brew. (Can be re-brewed 3-4 times)
(1) 5 grams of tea leaf into teapot with 350 to 500 ml of cold water.
(2) Storage into refrigerator for 6 to 8 hours or until the liquid becomes golden yellow.
